The best dairy-free pesto

Ever since cutting dairy out of my diet two years ago, I have made it my mission to revamp all of my favourite things in order to ensure that eating better does not have to be limiting. Pesto was a hard one though... And it took me a while BUT with this recipe you will NOT miss the parm, I promise. The lemon juice does a beautiful job of balancing out garlic and basil, making this a delicious spread on toast, dressing in salad or pasta sauce.

Dairy-Free Pesto

Prep time: 5 minutes Cook time: 0 minutes yield: 4 servings

ingredients

  • 2 cups packed fresh basil

  • 3 tbs hemp hearts

  • 3 large garlic cloves

  • 2 tbsp lemon juice

  • 1/4 cup nutritional yeast

  • 2-3 tbs olive oil

  • 4-6 tbs water (as needed)

method

  1. Put all items except hemp hearts in food processor until blended.

  2. once blended, add hemp hearts and pulse to incorporate

  3. Serve with your choice of pasta, or zucchini zoodles.

    **Optional: top with sliced avocado, tomatoes and pumpkin seeds
