Apples, cinnamon, pecans, oh my!

Talk about comfort food for the holidays, there’s just something about baked apples with cinnamon. Warming and delicious, and perfect for a healthier dessert to have at a dinner party or just because. This recipe is completely plant based, and can be made nut free with a few adjustments, by omitting the pecans and swapping almond flour for half coconut flour half spelt flour.

- Ceylon Cinnamon contains chromium, which helps encourage blood sugar stability
- Apples are nutrient dense and full of fibre, while oats also contain fibre, and B vitamins.
- Date paste is a whole food source of sweetener, high in fibre and brain boosting antioxidants.
- Coconut sugar is lower on the glycemic index, and when paired with healthy fats, helps promote blood sugar stability which is essential for
curbing cravings and keeping energy levels high.
- Coconut oil contains 15% MCT oil, MCTs skip being processed by the liver and get converted quickly into a source of energy. Coconut oil
also provides a nice healthy fat to help with keeping blood sugar balanced from the sugar in the apples and date paste.
- Pecans, walnuts, chia and hemp hearts are good sources of omega 3, which are anti-inflammatory, and great for boosting mental health
and overall brain health.

Recipe tips:

- Don’t throw away the apple core and peels! Save them for your juicer, or throw the peels in a smoothie!
- Top with organic plain unsweetened coconut yogurt in place of ice cream.
- Sometimes it’s nice to use a couple different kinds of apples like gala and Macintosh to mix up the sweet and sour flavour profile
- You can also sub half of the apples for pears for an apple-pear crumble!

Vegan Apple Crisp

Prep time: 30 minutes
Cook time: 30-45 minutes
Yield: 4 servings

ingredients

Filling

  • 4 apples, pealed, cored, and thinly sliced

  • 1/2 of a lemon, juiced

  • 1/3 cup date paste (can sub for coconut sugar)

  • 1 tsp (true) Ceylon cinnamon

  • 1 tbsp arrowroot powder or ground chia seed

  • 2 tbsp apple sauce

  • 1/4 tsp ground ginger, or 1/2 tsp fresh grated

  • pinch of nutmeg

    Topping

  • 1/4 cup rolled oats

  • 2 tbsp almond meal

  • 2 tbsp spelt flour

  • 2 tbsp date paste (or coconut sugar)

  • 2 tbsp chopped pecans and walnuts

  • 1/2 tsp (true) Ceylon cinnamon

  • 1/4 cup melted coconut oil

  • 2 tbsp hemp hearts

  • 1 tbsp chia seeds

    Garnish

  • plain unsweetened coconut yogurt, pecans

method

  1. Set oven to 350 degrees

  2. Wash, peal, core and chop apples. Place in a large bowl

  3. Add date paste and mix top full combine ( you may have to use your hands!)

  4. Add lemon juice, cinnamon, arrowroot or chia seed, apple sauce, ground ginger and nutmeg and stir to combine

  5. In a small bowl, combine rolled oats, almond flour, spelt flour, date paste or coconut sugar, chopped pecans, cinnamon, hemp hearts, chia seeds, and melted coconut oil - stir to combine.

  6. In a small baking dish, or 4 individualized baking dishes, add the filling and top with the crumbly mixture.

  7. Bake in a pre heated oven for 25-30 minutes, or until it begins to bubbling.

  8. Top with garnish and enjoy.
